The person who did some work on my old plaster simply called them “slats.” I don’t know about beyind drywall…
In all wood frame houses the vertical members you are referring to are called “studs” The drywall attaches directly to them. In older houses with plaster wall there are sometimes horizontal strips of wood called “lathes” these are nailed to the “studs”
It is called lathe. The term would be lathe and plaster not drywall. And they are installed horizontally.
My first guess you are referring to wains coating. Many old homes had vertical boards usually the first 4 ft or so from the floor. and then a chair rail. Some went to the ceiling.They were hard to dust, the boards had seams in them, and the boards were usually varnished and waxed, needed to be wiped down regularly.

Vary small boards. lath is run horizontal, studs go vertical.
